If you caught our love letter to fresh peaches here, you may have been asking yourself “What do you even do with 25 pounds of peaches??”

While there’s a ton of answers to that question (freeze ’em, can ’em, jam, share them with friends) cobbler is our favorite. On a recent trip to Nashville to see our Nonni, we got to experience her take on Peach Cobbler with our haul from The Peach Truck and there’s really nothing like it. It’s simple enough to customize yourself – We’re pretty serious about our peach to cobbler ratio over here, but you can easily adjust to suit your preferences! Best part? It’s super easy to get little hands involved with this one!

 

Ingredients

1 cup all-purpose flour

2 cups of sugar (divide these into 1 cup portions)

1 tablespoon baking powder

1 pinch of salt

4 cups of fresh peach slices

1 cup of milk (we used 2% for ours but any will do)

1/2 cup unsalted butter

1 tablespoon lemon juice

Ground cinnamon or nutmeg

 

 

Directions

Preheat oven to 375 and melt butter in a 13×9 inch baking dish.

Combine flour, 1 cup of sugar, salt, and baking powder. Mix milk in while stirring just enough to marry everything.

Bring remaining 1 cup of sugar, peach slices, optional spices, and lemon juice to a boil over high heat, stirring constantly until sugar is dissolved and liquid thickens.

Pour batter over melted butter (do not stir!), pour peaches last (again, no stirring!) and bake at 375 for 40 to 45 minutes. The whole thing will turn puffy and beautiful so you’ll know when its done!

Serve warm with ice cream, or cold with tomorrow morning’s coffee. We’re not here to judge.
